Homemade Clam Chowder

Ingredients

  • 16 oz. can clams, drained and chopped
  • 2 large white potatoes, cut in small quarters
  • 1/2 cup finely chopped onion
  • 1 cup celery, finely chopped
  • 2 carrots, shredded and chopped fine
  • 1 cup flour
  • 1/2 cup cooking oil

Instructions

  1. Mix the water, chopped onions, chopped celery, shredded carrots, and small potato quarters in a large pot.
  2. Bring to a boil and cook for 30 minutes or until the vegetables are tender.
  3. Add the chopped clams along with their juice to the vegetable mixture.
  4. Heat the milk to a boil separately.
  5. Gradually add the hot milk to the clam mixture, stirring constantly.
  6. Heat the cooking oil in a separate pan and mix with the flour to form a roux.
  7. Slowly add the roux to the clam mixture, stirring well.
  8. Bring to a boil and then reduce the heat to a low simmer.
  9. Simmer the chowder for 10 to 15 minutes, stirring constantly until slightly thickened.
  10. Remove from heat and serve hot.
