Ingredients

  • 1/4 cup flour
  • 1/4 teaspoon dried thyme, crushed
  • 2 pounds beef stew meat, cut in 1-inch cubes
  • 1/3 cup Crisco
  • 1/2 cup water
  • 3 potatoes, peeled and quartered
  • 2 onions, sliced
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups apple cider
  • 2 tablespoons vinegar
  • 4 carrots, quartered
  • 1 stalk celery, sliced

Instructions

  1. Combine flour, salt, dried thyme, and pepper in a bowl.
  2. Coat the beef stew meat with the flour mixture.
  3. In a large saucepan, brown the meat in hot Crisco, half at a time.
  4. Sprinkle any remaining flour mixture over the meat during browning.
  5. Return all the meat to the saucepan.
  6. Stir in apple cider, water, and vinegar.
  7. Bring the mixture to a boil, stirring occasionally.
  8. Reduce heat and simmer, covered, until the meat is tender, about 1.5 to 2 hours.
  9. Add potatoes, carrots, onions, and celery to the stew.
  10. Cook until the vegetables are tender, about 30 minutes.
  11. Skim off excess fat before serving.
