Ingredients

  • 2 cups dates, pitted, chopped
  • 2 tablespoons shortening
  • 2/3 cup brown sugar
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon mandarin peel, chopped
  • 3/4 cup hot water
  • 1/4 cup mandarin juice
  • 1 egg, beaten
  • 2 cups all-purpose flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Mix dates, shortening, brown sugar, honey, vanilla, mandarin peel, hot water, and mandarin juice in a bowl.
  2. Stir until well mixed and let stand for 10 minutes.
  3. Add the beaten egg to the mixture and combine.
  4. Resift flour with soda and salt into the date mixture.
  5. Stir to form a thick batter.
  6. Add chopped walnuts and mix evenly.
  7. Pour the batter into a well-greased 9 x 5 x 3-inch loaf pan.
  8. Bake in a 325°F (163°C) oven for about 1 hour and 10 minutes.
  9. Remove from the pan and transfer to a wire rack to cool before slicing or storing.
