Ingredients

  • 3 cups water
  • 1/2 cup honey
  • 2 tablespoons oil
  • 4 cups whole wheat flour
  • 1/2 cup dry milk
  • 1 tablespoon salt
  • 2 packages active dry yeast
  • 4 to 4 1/2 cups unbleached white flour
  • 1 beaten egg
  • sesame seed or poppy seed

Instructions

  1. Combine water, honey, and oil in a saucepan and heat to lukewarm. Pour into a large mixing bowl and re-check temperature.
  2. Stir in the powdered milk, salt, yeast, and 3 cups of whole wheat flour.
  3. Mix well.
  4. Add the rest of the whole wheat flour and enough unbleached flour to make a nice springy dough.
  5. Turn out onto a floured board and knead until smooth, about 10 to 15 minutes.
  6. Put dough into an oiled bowl, turning to coat all sides.
  7. Cover and let rise until double in size, about 60 minutes.
