Ingredients

  • 4 eggs
  • 2 Tbsp. vanilla
  • 1 c. oil
  • 1 c. honey
  • 2 c. grated zucchini
  • 2 c. sugar
  • 3 c. flour
  • 1 tsp. soda
  • 1 tsp. powder
  • 3 tsp. cinnamon
  • 1 tsp. salt

Instructions

  1. Beat together eggs, vanilla, oil, honey, grated zucchini, and sugar.
  2. Add flour, soda, powder, cinnamon, and salt to the mixture and combine well.
  3. Grease and flour three bread pans.
  4. Divide the batter evenly among the pans.
  5. Bake for 45 to 50 minutes at 300°F.
  6. Remove from oven and brush with butter before serving.
