Ingredients

  • 1 cup cooked rice
  • 1 (7 1/2 oz.) can crab
  • 5 hard-boiled eggs, chopped
  • 1 tablespoon finely chopped onion
  • 1 (6 oz.) can evaporated milk
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cups mayonnaise
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Mix crab and chopped eggs in a bowl.
  2. Blend the remaining ingredients (except cheese) into mayonnaise until smooth.
  3. Stir the mayonnaise mixture into the crab and eggs.
  4. Pour the mixture into a greased shallow 1 1/2-quart baking dish.
  5. Sprinkle shredded Cheddar cheese over the top.
  6. Bake at 350°F for 25 to 30 minutes, or until thoroughly heated and lightly browned.
