Ingredients

  • 1 head romaine lettuce
  • 1 head iceberg lettuce
  • 1 small red onion
  • 6 oz. green olives
  • 1 small can pimentos
  • 1 can quartered artichoke hearts
  • 6 oz. Parmesan
  • 1/2 box croutons
  • 1/3 cup red wine vinegar
  • 1/2 cup canola oil
  • 1/3 teaspoon pepper

Instructions

  1. Tear the romaine and iceberg lettuce into bite-sized pieces and combine in a large bowl.
  2. Slice the red onion into thin slices.
  3. Drain the green olives, then add them along with pimentos and quartered artichoke hearts to the bowl.
  4. Mix red wine vinegar, canola oil, pepper, and a pinch of salt in a jar and shake well.
  5. Pour the vinaigrette over the salad and toss to combine.
  6. Add croutons just before serving for crunch.
