Ingredients

  • 2 Tbsp. cooking oil
  • 2 Tbsp. diced green pepper
  • 1 pkg. taco seasoning mix
  • 2 c. taco sauce or salsa
  • 1/4 c. flour
  • 1 c. milk
  • 1 1/2 c. shredded Cheddar cheese
  • 2 Tbsp. chopped onion
  • 1 lb. ground beef
  • 1 c. water
  • 1/2 c. butter
  • 1 tsp. salt
  • 12 (6-inch) tortillas
  • 1 c. sour cream

Instructions

  1. In a skillet, heat oil and sauté green pepper and onion for 3 to 5 minutes.
  2. Add ground beef and brown lightly.
  3. Pour off excess fat and discard.
  4. Stir in taco seasoning mix, water, and 1/2 cup of taco sauce.
  5. Heat to boiling, then reduce heat and simmer uncovered for 10 minutes, stirring occasionally.
  6. While filling simmers, prepare cheese sauce by combining flour, milk, and remaining taco sauce, cooking until thickened.
  7. Pour sauce over tortillas filled with beef, roll them up, and place in a baking dish.
  8. Sprinkle shredded Cheddar cheese on top and bake until cheese is melted and bubbly.
  9. Serve hot, garnished with chopped onion and optional sour cream.
