- Trim fat from the beef brisket.
- Place the brisket in an 8-quart Dutch oven.
- Add light beer, sliced onion, bay leaf, peppercorns, bouillon cubes, salt, and water.
- Bring to a boil over medium-high heat.
- Cover tightly and simmer for 2 1/2 to 3 hours until the meat is tender.
- Cook the beets separately until tender.
- Remove the cooked brisket from the broth and place on a large platter to cool.
- Add cabbage, carrots, and potatoes to the broth, bring to a boil, then simmer until vegetables are done (about 30 minutes).
- Thinly slice the cooled brisket.
- Serve sliced beef with the cooked vegetables from the broth.
- Pass horseradish and serve beets as a side dish.
