Ingredients

  • 1 cup butter or margarine
  • 1 cup sugar
  • 3 eggs
  • 1/2 teaspoon almond extract
  • 3 tablespoons golden or light corn syrup
  • 1/4 cup finely ground, blanched almonds
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 2 cups seedless raisins
  • 2 1/2 cups currants
  • Grated rind of 3 oranges

Instructions

  1. Cream the butter or margarine with the sugar until light and fluffy.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Beat in the almond extract, corn syrup, and ground almonds.
  4. Reserve 1/2 cup of the flour from the total amount.
  5. Sift the remaining flour with the baking soda and salt.
  6. Add the flour to the butter mixture alternately with the milk, beating well after each addition.
  7. Coat the raisins and currants with the reserved 1/2 cup of flour.
  8. Fold the coated raisins, currants, and grated citrus peels into the batter.
  9. Distribute the batter evenly in a well buttered and floured tube pan.
  10. Bake in a 300°F (150°C) oven for 1 1/2 to 1 3/4 hours.
  11. Let the cake cool in the pan for 45 minutes, then remove to a wire rack to cool further.
