Ingredients

  • 5 lbs potatoes
  • 1 cup chopped celery
  • 1 cup chopped green pepper

  • 1 large jar Kraft real mayonnaise

  • 3/4 lbs bacon
  • 1/3 cup chopped onion
  • 5 eggs slightly beaten
  • 2 small cans evaporated milk
  • 2 small cans evaporated milk (little over 8 oz.)

Instructions

  1. Dice bacon and fry until almost crisp; add chopped onion and sauté until golden.
  2. Melt margarine in a pan.
  3. Drain bacon and onion into a strainer over a large measuring cup to collect drippings and melted margarine.
  4. Peel and grate potatoes using a grating/shredding disc on a food processor.
  5. In a large mixing bowl, stir eggs, salt, and evaporated milk together.
  6. Add chopped celery, green pepper, green onions, dried cilantro, and diced eggs into the mixture.
  7. Combine the grated potatoes and remaining ingredients and mix well.
  8. Pour the mixture into a greased 9x13 inch baking dish, 2-3 inches deep.
  9. Preheat oven to 450°F and bake for 10 minutes.
  10. Lower oven temperature to 350°F and bake until edges are crispy brown, about 1.5 hours.
  11. Serve traditionally with sour cream.
