Island Fried Fish

Ingredients

  • 3 lbs white fish fillets
  • 1/2 cup soy sauce
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 cup milk
  • 1 egg
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 (20 ounce) cans pineapple chunks
  • 3/4 cup sugar
  • 2 cups cooking oil

Instructions

  1. Wash fish, pat dry.
  2. Cut into 1 1/2 inch squares.
  3. Marinate in soy sauce for 20-30 min, turning once or twice.
  4. Combine.flour, 1/2 C cornstarch, milk, egg, baking powder and seasonings.
  5. Pour pineapple into saucepan, Stir in sugar, Heat through.
  6. Pour 1 1/2 inches oil in a heavy skillet.
  7. Heat to 375*, Drain fish.
  8. Dip quickly into batter, Drain.
  9. Drop into hot oil.
  10. Keep temprature of oil constant.
  11. Cook for 1-2 min or until crisp.
  12. Remove to a paper towel lined pan, Keep in warm oven.
  13. Mix 1 tbsp cornstarch with 1/4 C water, add to pineapple mixture, cook until thickened.
  14. Arrange pineapple sauce on platter, Place fish on top carefully.
