Instructions

  1. Heat oil in a frypan over medium heat.
  2. Add chopped parsley, minced garlic, rosemary, thyme, sage, and chopped vegetables (celery, carrot, onion, zucchini).
  3. Cook until vegetables are soft.
  4. Stir in tomato sauce, canned tomatoes with their liquid, and crushed red pepper.
  5. Chop fresh mushrooms and add to the pan along with water.
  6. Can use dried Italian mushrooms with this water as a soaking liquid.
  7. Cover and simmer until thick, about 3 hours.
  8. Add salt to taste before serving.
