Ingredients

  • 1 c. sugar
  • 1 c. cooked pumpkin
  • 2 eggs
  • 1 tsp. soda
  • 1/4 tsp. ginger
  • 1 c. raisins
  • 1/4 c. water
  • 1/2 c. brown sugar
  • 1/2 c. salad oil
  • 2 c. sifted plain flour
  • 1/2 c. chopped nuts
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Instructions

  1. Combine sugar, cooked pumpkin, salad oil, and eggs; beat until well blended.
  2. Sift together the plain flour, soda, salt, ginger, nutmeg, and cinnamon.
  3. Add the sifted dry ingredients to the pumpkin mixture and mix well.
  4. Stir in raisins, chopped nuts, and water until evenly incorporated.
  5. Pour the batter into a loaf pan and bake at 350°F for 65 minutes, or until a toothpick inserted in the center comes out clean.
