Ingredients

  • 3 egg whites
  • 1/2 cup skim milk
  • 1 teaspoon vanilla
  • 4 cups bran cereal
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 orange with rind, diced
  • 4 apples
  • 4 bananas
  • 4 cups carrots
  • 1 cup pecans

Instructions

  1. Preheat oven to 425°F.
  2. In a blender, mix egg whites, milk, nutmeg, cinnamon, and vanilla.
  3. Add diced orange rind and bran cereal; blend well.
  4. In the blender, grind apples, bananas, and carrots until finely chopped.
  5. Combine the ground fruit and vegetable mixture with the cereal mixture.
  6. Stir in pecans.
  7. Pour the batter into a baking dish and bake for 30 minutes.
