Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup buttermilk
  • 3 cups flour, sifted
  • 1 cup blackberry jam
  • 1 cup crushed pineapple with juice
  • 1 cup strawberry preserves
  • 1 cup nuts (optional)
  • 2 teaspoons cinnamon
  • 2 teaspoons allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger
  • 1 teaspoon baking soda
  • 2 sticks margarine or butter

Instructions

  1. Sift spices with flour; cream butter and sugar.
  2. Add eggs, beating well.
  3. Add pineapple with juice; continue beating.
  4. Mix soda with buttermilk; add alternately with flour and the first mixture.
  5. Add jam and preserves.
  6. Pour into prepared cake pans and bake at 350°F for 30 to 35 minutes or until done.
