  • 2 boneless, skinless chicken breasts

  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper

  2. In a separate container, whisk together oil, seasoned rice vinegar, sugar, salt, and pepper until well combined.
  3. Chop the chicken breasts into chunks and barbecue or cook until done, then add to the cabbage mixture.
  4. Crush the ramen noodles and add them to the salad along with sesame seeds and slivered almonds.
  5. Toss everything together and serve.

Tips & Substitutions

For a crunchier texture, add the ramen noodles just before serving to prevent them from becoming soggy. If you want to make it vegetarian, substitute the chicken with tofu or chickpeas. You can also replace the slivered almonds with sunflower seeds for a nut-free option. Experimenting with different vinegars, like apple cider vinegar, can also give the dressing a unique twist.

Serving Suggestions

This Japanese Cabbage Salad makes a refreshing side dish for grilled meats or seafood, and pairs beautifully with Chicken Pie Superb With Sweet Potato Crust. It can also be served as a light main dish on its own. Consider adding sliced cucumbers or bell peppers for extra color and flavor, and serve it alongside rice dishes for a complete meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To maintain the crunchiness of the salad, keep the dressing separate and mix it in just before serving. If reheating chicken, do so gently in the microwave or a skillet to prevent it from drying out.
