Ingredients

  • 1 chicken
  • 1/4 cup butter
  • 1/2 pound Italian sausage
  • 1 1/2 cups chopped onion
  • 1 cup chopped green pepper
  • 1 teaspoon thyme
  • 1/4 teaspoon chili powder
  • 1 (16 oz) can tomatoes
  • 1 can chicken broth
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup rice
  • 2 garlic cloves

Instructions

  1. Brown the chicken in butter.
  2. Cook the Italian sausage in the drippings.
  3. Remove the sausage and drain on paper towels.
  4. Repeat the browning process with ham and vegetables.
  5. Mix the cooked ingredients together and add seasonings (thyme, chili powder, salt, pepper).
  6. Add chicken broth and canned tomatoes to the mixture.
  7. Bring the mixture to a boil and add uncooked rice.
  8. Cover and bake for one hour until the liquid is absorbed.
