A flavorful and easy-to-make salad combining tender lasagna noodles, fresh greens, savory salami, and cheesy strips, perfect for a quick and satisfying meal or potluck dish.

Ingredients

  • 1 qt. water
  • 1 tsp. salt
  • 1 tsp. oil
  • 4 lasagna noodles
  • 1/2 c. Italian dressing
  • 6 c. torn assorted salad greens
  • 2 green onions, sliced
  • 6 slices salami, julienned
  • 6 oz. Brick cheese, cut into strips
  • 1 c. croutons
  • 1/4 c. Parmesan cheese

Instructions

  1. Bring water to a boil in a large pot.
  2. Add salt and oil to the boiling water.
  3. Cook lasagna noodles until firm, about 8-10 minutes.
  4. Drain noodles and rinse with cold water.
  5. Cut cooked noodles into strips.
  6. Place noodle strips in a salad bowl.
  7. Add Italian dressing and toss well to coat.
  8. Add salad greens, sliced green onions, julienned salami, cheese strips, croutons, and Parmesan cheese.
  9. Toss all ingredients together until evenly coated.
