Spaghetti Squash Bake

Ingredients
- 4 servings cooked spaghetti ⓘ
- 1 lb. Italian sausage ⓘ
- 1 package Ricotta cheese ⓘ
- 2 small zucchini, cubed
- 2 small yellow squash, cubed ⓘ
- 1 medium onion, chopped ⓘ
- 1 cup fresh mushrooms, chopped ⓘ
- 1/2 cup red wine vinegar ⓘ
- 1/4 cup olive oil ⓘ
- 2 tablespoons Italian seasoning ⓘ
- 1 garlic clove, crushed ⓘ
- 1 large package Mozzarella cheese
- 2 large cans tomato sauce ⓘ
Instructions
- Brown the Italian sausage in a skillet and drain excess fat.
- In the same skillet, sauté olive oil, peppers, onion, mushrooms, garlic, red wine vinegar, zucchini, yellow squash, and Italian seasoning until tender.
- Add tomato sauce to the skillet and simmer for 10 minutes.
- Grease a baking dish and layer cooked spaghetti, sauce mixture, ricotta cheese, and mozzarella cheese.
- Bake at 350°F until the cheese is brown and bubbly.
