Ingredients

  • 4 servings cooked spaghetti
  • 1 lb. Italian sausage
  • 1 package Ricotta cheese
  • 2 small zucchini, cubed
  • 2 small yellow squash, cubed
  • 1 medium onion, chopped
  • 1 cup fresh mushrooms, chopped
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons Italian seasoning
  • 1 garlic clove, crushed
  • 1 large package Mozzarella cheese
  • 2 large cans tomato sauce

Instructions

  1. Brown the Italian sausage in a skillet and drain excess fat.
  2. In the same skillet, sauté olive oil, peppers, onion, mushrooms, garlic, red wine vinegar, zucchini, yellow squash, and Italian seasoning until tender.
  3. Add tomato sauce to the skillet and simmer for 10 minutes.
  4. Grease a baking dish and layer cooked spaghetti, sauce mixture, ricotta cheese, and mozzarella cheese.
  5. Bake at 350°F until the cheese is brown and bubbly.
