Ingredients

  • 3 small zucchini, sliced
  • 1 medium sweet onion, diced
  • 2 tsp. melted butter
  • 1 cup Cheddar cheese
  • 3 medium ripe tomatoes, diced
  • 3 bread slices, crumbled
  • 2 tsp. Parmesan cheese

Instructions

  1. Combine bread crumbs, melted butter, and Parmesan cheese to make the bread crumb mixture.
  2. In a greased 1 1/2-quart casserole dish, layer half of the diced onion, diced tomatoes, and sliced zucchini.
  3. Repeat the layering with the remaining onion, tomatoes, and zucchini.
  4. Sprinkle with salt, pepper, and Cheddar cheese over the layered vegetables.
  5. Top with the prepared bread crumb mixture.
  6. Bake at 350°F for 30 to 40 minutes or until the casserole is tender and golden on top.
