Ingredients

  • 1 1/2 Tbsp. butter flavored mix
  • 1/4 c. water
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. sliced fresh mushrooms
  • 2 c. cubed, cooked turkey breast
  • 1 (10 3/4 oz.) can ready to serve reduced fat cream of chicken soup
  • 1/2 c. skim milk
  • 2 Tbsp. no sugar added apricot spread
  • 1 Tbsp. dry white wine
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg

Instructions

  1. Combine butter flavored mix and water, stirring until mix dissolves.
  2. Pour into a large skillet; add chopped onions, green pepper, mushrooms and garlic.
  3. Cook over medium heat, stirring constantly, until vegetables are tender.
  4. Stir in cubed turkey, cream of chicken soup, skim milk, apricot spread, white wine, salt, and nutmeg.
  5. Bring to a boil over medium heat.
  6. Reduce heat and simmer uncovered, 10 to 15 minutes, stirring occasionally.
  7. Serve over rice or pasta.
