Lazy Day Turkey
A comforting, flavorful turkey dish with vegetables and creamy sauce, perfect for a quick weeknight meal that pairs well with rice or pasta.
Ingredients
- 1 1/2 Tbsp. butter flavored mix ⓘ
- 1/4 c. water ⓘ
- 1/2 c. chopped onion ⓘ
- 1/2 c. chopped green pepper ⓘ
- 1/2 c. sliced fresh mushrooms ⓘ
- 2 c. cubed, cooked turkey breast ⓘ
- 1 (10 3/4 oz.) can ready to serve reduced fat cream of chicken soup ⓘ
- 1/2 c. skim milk ⓘ
- 2 Tbsp. no sugar added apricot spread ⓘ
- 1 Tbsp. dry white wine ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. ground nutmeg ⓘ
Instructions
- Combine butter flavored mix and water, stirring until mix dissolves.
- Pour into a large skillet; add chopped onions, green pepper, mushrooms and garlic.
- Cook over medium heat, stirring constantly, until vegetables are tender.
- Stir in cubed turkey, cream of chicken soup, skim milk, apricot spread, white wine, salt, and nutmeg.
- Bring to a boil over medium heat.
- Reduce heat and simmer uncovered, 10 to 15 minutes, stirring occasionally.
- Serve over rice or pasta.
