  • 1 onion, chopped fine
  • 1 tsp. vinegar
  • 1 Tbsp. bread crumbs
  • 1 Tbsp. tapioca
  • salt
  • cloves

Instructions

  1. Set the roast out at room temperature for 1 hour before cooking.
  2. Preheat the oven to 375°F (190°C).
  3. Rub the meat well with salt and sprinkle with pepper.
  4. Place the meat, fat side up, in a shallow roasting pan. Do not cover and do not add water.
  5. Put the roast in the oven.
  6. Cook for just 1 hour. Turn off the heat, but do not open the oven door at any time until ready to serve.
  7. Reset the oven temperature to 375°F (190°C) and cook for an additional 30 to 40 minutes before serving.
  8. Open the oven door and remove the roast to a serving platter. The meat will be brown on the outside and medium-rare inside.

Tips & Substitutions

For a more flavorful roast, consider marinating the beef overnight with vinegar and spices. You can substitute the chuck rib with brisket for a slightly different texture. If you prefer, add garlic or rosemary for an aromatic touch. Ensure the meat is at room temperature before cooking to achieve even doneness. Remember, the key to a perfect roast is not to open the oven door during the resting phase. This method is similar to that used in Carolyn'S Easy Stew Beef.

Serving Suggestions

Serve the lazy roast alongside the canned peas and sautéed carrots for a quick and delicious meal. Mashed potatoes or roasted vegetables also make excellent sides. For a complete feast, consider pairing it with a simple salad or crusty bread. Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the beef in a preheated oven at 350°F (175°C) until warmed through, about 20 minutes. Alternatively, slice the meat and heat it gently in a skillet with a splash of beef broth to keep it moist. This method helps in retaining flavor and tenderness.

Frequently Asked Questions

Can I use a different cut of beef for this recipe?

Yes, you can use other cuts like ribeye or sirloin, but keep in mind that cooking times may vary. Ensure you adjust based on the thickness and fat content of the cut to achieve your desired doneness.

What should I do if my roast is not browning properly?

If your roast isn't browning, check your oven temperature with an oven thermometer. You can also sear the meat in a hot pan before roasting to develop a crust. Additionally, ensure you're using enough salt, as this helps with browning.

How can I tell when the roast is done?

The best way to check doneness is with a meat thermometer. For medium-rare, aim for an internal temperature of 135°F (57°C). Remember, the meat will continue to cook slightly after being removed from the oven, so it's best to take it out just before it reaches your target temperature.
