Ingredients

  • 1 cup cooked rice
  • 1/3 cup margarine
  • 1/3 cup lemon juice
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 (10 oz.) package frozen chopped broccoli, thawed
  • 1 cup shredded sharp Cheddar cheese
  • 8 flounder fillets, fresh or thawed
  • paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small saucepan, melt the margarine.
  3. Stir in lemon juice, salt, and pepper.
  4. In a medium bowl, combine cooked rice, thawed broccoli, and 1/4 cup of the sauce mixture; mix well.
  5. Divide the broccoli mixture among the flounder fillets.
  6. Roll up each fillet and place seam side down in a baking dish.
  7. Bake for 25 minutes.
  8. Spoon the remaining sauce over individual servings.
  9. Garnish with paprika before serving.
