  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 cup carrots

Tips & Substitutions

For added depth, sauté the onion and garlic in a bit of olive oil before adding them to the pot. You can substitute quinoa for barley or use vegetable broth instead of water for richer flavor. If you want a meatier texture, consider adding diced mushrooms or cooked sausage. Adjust the spices to taste, and feel free to include other vegetables like spinach or kale for extra nutrition.

Serving Suggestions

This hearty soup pairs beautifully with Marinated Sliced Tomatoes or a fresh green salad. For a complete meal, serve with crusty bread or a side of Taboulah. Top each bowl with Swiss cheese just before serving for a creamy finish, and consider garnishing with fresh herbs for an extra burst of flavor.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 5 days. To reheat, add a splash of water to thin it out as it may thicken in the fridge. Heat on the stovetop over low heat, stirring occasionally, or microwave in short intervals until warmed through.
