A hearty, flavorful lentil and orzo dish with aromatic vegetables, perfect as a comforting one-pot meal suitable for any season and enjoyed with salad and bread.

Ingredients

  • 1 cup lentils
  • vegetable broth to cover 1-inch over lentils
  • 1 cup onions, diced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 clove garlic, minced
  • 1 cup orzo

Instructions

  1. Sauté diced onions, celery, carrots, and minced garlic until tender.
  2. Add lentils and vegetable broth to the sautéed vegetables.
  3. Cover and cook for approximately 45 minutes until lentils are tender.
  4. Cook orzo separately in vegetable broth until al dente.
  5. Add cooked orzo to the lentil mixture and stir well.
  6. Serve in bowls, preferably with a side salad and bread.
