- Cream the sugar and butter together until smooth and fluffy.
- Sift the flour with salt, cinnamon, cloves, and allspice.
- Mix the baking soda with buttermilk until dissolved.
- Alternately add the sifted dry ingredients and buttermilk mixture to the creamed sugar and butter, starting and ending with the dry ingredients.
- Add the remaining ingredients except the eggs and mix well.
- Beat in the eggs one at a time until fully incorporated.
- Divide the batter evenly into three greased 8-inch layer pans.
- Bake at 325°F (160°C) for about 40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the layers to cool before assembling and frosting as desired.
