Light Vegetable Tuna Pie

Ingredients
- 1 egg, slightly beaten ⓘ
- 1/2 cup mayonnaise ⓘ
- 1/4 teaspoon salt ⓘ
- 1/4 teaspoon dry mustard ⓘ
- a dash of ground red pepper ⓘ
- 3 teaspoons chopped onion
- 3 teaspoons chopped green pepper ⓘ
- 1/2 cup dry bread crumbs
- 1 can lite tuna (undrained) ⓘ
- 1 (10 oz.) package frozen mixed vegetables, cooked and drained ⓘ
- 1/2 cup Cheddar cheese ⓘ
Instructions
- In a mixing bowl, combine the egg, mayonnaise, salt, dry mustard, and ground red pepper.
- Stir in chopped onion, chopped green pepper, and bread crumbs; then mix in the canned tuna.
- Press the mixture gently into an 8-inch pie plate with a fork.
- Toss the cooked and drained mixed vegetables with 1/4 cup of cheddar cheese and spread over the tuna mixture in the shell.
- Sprinkle the remaining 1/4 cup of cheddar cheese over the vegetables.
- Bake at 325°F for 20 to 25 minutes or microwave on High for 3 to 5 minutes until heated through and cheese is melted.
