Ingredients

  • 1 egg, slightly beaten
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • a dash of ground red pepper
  • 3 teaspoons chopped onion
  • 3 teaspoons chopped green pepper
  • 1/2 cup dry bread crumbs
  • 1 can lite tuna (undrained)
  • 1 (10 oz.) package frozen mixed vegetables, cooked and drained
  • 1/2 cup Cheddar cheese

Instructions

  1. In a mixing bowl, combine the egg, mayonnaise, salt, dry mustard, and ground red pepper.
  2. Stir in chopped onion, chopped green pepper, and bread crumbs; then mix in the canned tuna.
  3. Press the mixture gently into an 8-inch pie plate with a fork.
  4. Toss the cooked and drained mixed vegetables with 1/4 cup of cheddar cheese and spread over the tuna mixture in the shell.
  5. Sprinkle the remaining 1/4 cup of cheddar cheese over the vegetables.
  6. Bake at 325°F for 20 to 25 minutes or microwave on High for 3 to 5 minutes until heated through and cheese is melted.
