Lima Bean Chowder(Real Good)
Ingredients
- 1/2 c. bacon, chopped fine ⓘ
- 1 large onion ⓘ
- 3 c. chicken broth ⓘ
- 1 c. cubed carrots ⓘ
- 2 c. cubed potatoes ⓘ
- 2 c. mushrooms, sliced ⓘ
- 1 1/2 c. lima beans (fordhook) ⓘ
- 3/4 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1/8 tsp. nutmeg ⓘ
- 1/2 tsp. dill weed ⓘ
- 1/2 tsp. garlic powder ⓘ
- 1/2 c. light cream ⓘ
- 1 1/2 Tbsp. butter or oleo ⓘ
Instructions
- Fry bacon in large heavy skillet until brown.
- Saute onions in bacon drippings until transparent.
- Add broth, vegetables and herbs; cover over low heat for 25 minutes.
- Put cream in small amount of hot mixture and add to rest of soup.
- Simmer several more minutes, until soup is piping hot.
- Serve soup hot with a bit of butter and a dash of paprika on each serving.
- You could add some Cheddar.
