Linguine Turkey Bolognese

Ingredients

  • 2 Tbsp olive oil
  • 1 stalk celery
  • 1 medium carrot
  • 1 medium onion
  • 3 cloves garlic
  • 1 lb ground turkey
  • 1 Tbsp oregano
  • 1/2 cup red wine
  • 1/2 cup half and half
  • 1 can plum tomatoes (28 oz.)
  • 2 Tbsp tomato paste
  • 1 cup defatted chicken broth
  • salt and pepper to taste

Instructions

  1. Saute olive oil, chopped celery, chopped carrot, chopped onion, and chopped garlic in a pan for about 5 minutes.
  2. Add ground turkey and cook until slightly browned.
  3. Pour in red wine and simmer on low heat for 10 minutes.
  4. Add half and half and simmer until reduced, about 8 minutes.
  5. Stir in plum tomatoes, tomato paste, oregano, and chicken broth.
  6. Simmer, partially covered, for 1 hour.
  7. Serve the sauce over cooked linguine pasta.
