Ingredients

  • 2/3 cup dry milk powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 6 tablespoons flour
  • 1 teaspoon baking soda
  • 8 packets artificial sweetener
  • 2 eggs
  • 1 cup pumpkin
  • 1 teaspoon vanilla
  • 1/2 cup grated carrots
  • 4 tablespoons raisins

Instructions

  1. Combine dry ingredients: dry milk powder, pumpkin pie spice, cinnamon, flour, soda, and artificial sweetener.
  2. In a separate bowl, beat eggs and add vanilla, mixing well.
  3. Add pumpkin to the egg mixture and stir until combined.
  4. Add the pumpkin mixture to the dry ingredients, then fold in grated carrots and raisins.
  5. Spray muffin tins with nonstick spray.
  6. Fill muffin tins evenly with the batter.
  7. Bake at 350°F (175°C) for 15 minutes.
