Instructions

  1. Partially thaw frozen lobster tails.
  2. Split lobster tails in half lengthwise.
  3. Cut the lobster in half crosswise to make 8 portions.
  4. In a large covered saucepan, cook chopped onion, green pepper, and chopped celery in butter until tender, but not brown.
  5. Add chicken broth, undrained tomatoes, snipped parsley, salt, and pepper. Bring to a boil.
  6. Add cooked pasta to the broth.
  7. Reduce heat to simmer.
  8. Add lobster pieces and torn fresh spinach leaves to the soup.
  9. Cook about 5 minutes longer or until lobster is done.
