Ingredients

  • 2 hearts of romaine lettuce
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon Parmesan cheese
  • 1 large tomato, chopped
  • Black pepper, fresh ground to taste
  • 1 (6 oz) jar marinated artichoke hearts
  • 1 (15 oz) can garbanzo beans, drained and rinsed
  • 8 stuffed green olives
  • 8 pitted black olives
  • 8 cherry tomatoes, halved
  • 4 small whole fresh mushrooms
  • 1 large clove garlic, minced or pressed
  • 2 tablespoons lemon juice
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Sprinkle grated daikon with salt; let stand until limp, about 15 minutes.
  2. Squeeze excess water from the daikon to remove as much moisture as possible.
  3. Prepare marinade by mixing lemon juice, soy sauce, minced garlic, and other ingredients as specified.
  4. Marinate the daikon and carrot in the mixture for the appropriate time.
  5. Combine all salad ingredients including chopped tomato, olives, cherry tomatoes, mushrooms, and parsley in a large bowl.
  6. Toss the salad with the prepared marinade and season with black pepper to taste.
  7. Serve immediately or chilled as desired.
