Low-Fat Caesar Salad

Ingredients
- 2 hearts of romaine lettuce ⓘ
- 1/4 cup lemon juice ⓘ
- 2 cloves garlic, minced ⓘ
- 1/4 cup soy sauce ⓘ
- 1 tablespoon Parmesan cheese ⓘ
- 1 large tomato, chopped ⓘ
- Black pepper, fresh ground to taste ⓘ
- 1 (6 oz) jar marinated artichoke hearts
- 1 (15 oz) can garbanzo beans, drained and rinsed ⓘ
- 8 stuffed green olives ⓘ
- 8 pitted black olives
- 8 cherry tomatoes, halved ⓘ
- 4 small whole fresh mushrooms ⓘ
- 1 large clove garlic, minced or pressed ⓘ
- 2 tablespoons lemon juice
- 1 teaspoon dried basil leaves ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon black pepper ⓘ
- 2 tablespoons chopped parsley ⓘ
Instructions
- Sprinkle grated daikon with salt; let stand until limp, about 15 minutes.
- Squeeze excess water from the daikon to remove as much moisture as possible.
- Prepare marinade by mixing lemon juice, soy sauce, minced garlic, and other ingredients as specified.
- Marinate the daikon and carrot in the mixture for the appropriate time.
- Combine all salad ingredients including chopped tomato, olives, cherry tomatoes, mushrooms, and parsley in a large bowl.
- Toss the salad with the prepared marinade and season with black pepper to taste.
- Serve immediately or chilled as desired.
