Low-Fat Chicken Cacciatore

Ingredients
- 15 oz. can no salt tomatoes, cut up and drained ⓘ
- 1 cup no salt tomato sauce ⓘ
- 1 1/2 tsp. oregano ⓘ
- 1/2 tsp. basil ⓘ
- 1 Tbsp. honey ⓘ
- 1/4 tsp. white pepper ⓘ
- 1/4 cup fat-free chicken broth ⓘ
- 3 cloves garlic, chopped ⓘ
- 1 onion, chopped ⓘ
- 1 large green pepper, cut in 1-inch strips ⓘ
- 3/4 lb. boneless chicken, cut in 2-inch cubes ⓘ
- 3/4 cup frozen green peas ⓘ
- 1 Tbsp. balsamic vinegar ⓘ
Instructions
- Place drained canned tomatoes, tomato sauce, oregano, basil, honey, and white pepper in a 3-quart saucepan.
- Cover and simmer for 15 minutes.
- Heat 4 tablespoons of chicken broth in a large skillet over medium-high heat.
- Stir-fry garlic, onion, green pepper, and chicken for 10 minutes, until chicken is no longer pink inside.
- Add the cooked chicken and green peppers to the sauce and simmer covered for 10 minutes.
- Add peas and balsamic vinegar and cook uncovered for an additional 5 minutes.
