Ingredients

  • 1 box lasagna noodles
  • 1 lb. lite Ricotta
  • 1 celery
  • 3 egg whites
  • 2 Tbsp. fat-free Parmesan cheese
  • 10 oz. lite Mozzarella cheese
  • 32 oz. tomato sauce
  • 20 oz. spinach
  • 6 oz. tomato paste
  • 2 Tbsp. sugar
  • 2 tsp. salt
  • 1 tsp. pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions, drain, and set aside.
  3. In a skillet, sauté chopped onions in a teaspoon of oil until golden brown. Add 32 oz of tomato sauce and 6 oz of tomato paste; simmer for 10–15 minutes. Stir in 2 tbsp sugar, 2 tsp salt, and 1 tsp pepper.
  4. In a bowl, combine 1 lb lite ricotta, 3 egg whites, 2 tbsp fat‑free Parmesan, 10 oz spinach, and 1 tsp pepper; mix well.
  5. Spread a thin layer of the tomato sauce in a baking dish. Layer noodles, ricotta mixture, and 10 oz lite mozzarella. Repeat layers, ending with mozzarella on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
  7. Let the lasagna rest for 10 minutes before slicing and serving.
