- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package directions, drain, and set aside.
- In a skillet, sauté chopped onions in a teaspoon of oil until golden brown. Add 32 oz of tomato sauce and 6 oz of tomato paste; simmer for 10–15 minutes. Stir in 2 tbsp sugar, 2 tsp salt, and 1 tsp pepper.
- In a bowl, combine 1 lb lite ricotta, 3 egg whites, 2 tbsp fat‑free Parmesan, 10 oz spinach, and 1 tsp pepper; mix well.
- Spread a thin layer of the tomato sauce in a baking dish. Layer noodles, ricotta mixture, and 10 oz lite mozzarella. Repeat layers, ending with mozzarella on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
- Let the lasagna rest for 10 minutes before slicing and serving.
