Ingredients

  • 3 medium potatoes, peeled and coarsely chopped
  • 1 cup water
  • 2 teaspoons instant chicken bouillon granules
  • 1/8 teaspoon ground red pepper
  • dash black pepper
  • 3 cups milk
  • 1 (10 oz.) package frozen corn
  • 2 tablespoons flour
  • 6 oz. American cheese, shredded
  • 1 tablespoon snipped parsley

Instructions

  1. In a large saucepan, combine potatoes, water, bouillon, red pepper, and black pepper.
  2. Bring to a boil, then reduce heat and cover.
  3. Simmer about 10 minutes or until potatoes are just tender, stirring occasionally.
  4. Stir in 2 1/2 cups of milk and corn.
  5. Cook until heated through, about 5-10 minutes.
  6. Add shredded American cheese and stir until melted and smooth.
  7. Garnish with snipped parsley before serving.
