Make-Ahead Layered Mexican Casserole
A hearty make-ahead Mexican casserole layered with seasoned ground beef, cheese, beans, and tortillas, perfect for family dinners or potlucks that can be prepared in advance.
Ingredients
- 2 lb. lean ground beef ⓘ
- 1 medium onion, chopped ⓘ
- 2 Tbsp. chili powder ⓘ
- 1 tsp. garlic powder ⓘ
- 1 tsp. cumin ⓘ
- 1 tsp. salt
- 1/2 tsp. pepper ⓘ
- 6 to 8 corn tortillas ⓘ
- 1 (16 oz.) can Ranch Style beans ⓘ
- 1 lb. Monterey Jack cheese, shredded ⓘ
- 1 (10 oz.) can Ro-Tel tomatoes ⓘ
- 1 c. shredded Cheddar cheese ⓘ
- 1 (10 oz.) can mushroom soup ⓘ
Instructions
- In a large skillet, brown ground beef, onion, chili powder, garlic powder, cumin, salt, and pepper, continually stirring.
- Drain off excess grease.
- Spread half of the meat mixture in a large casserole dish.
- Top with tortillas.
- Combine beans with the remaining meat mixture.
- Spread the bean and meat mixture over the tortillas.
- Layer Monterey Jack cheese over the meat mixture.
- Add a layer of Ro-Tel tomatoes.
- Sprinkle shredded Cheddar cheese on top.
- Top with mushroom soup.
- Cover and refrigerate for 24 hours before baking.
