Ingredients

  • 2 tsp margarine
  • 1/2 cup sliced almonds
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp grated onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 12 oz fresh spinach
  • 1 cup shredded cooked duck
  • 1 cup sliced fresh mushrooms
  • 1 small red onion

Instructions

  1. In a small skillet, melt the margarine over medium-low heat.
  2. Add the sliced almonds and cook until light golden brown, stirring constantly.
  3. Remove from heat and let cool.
  4. In a bowl, whisk together olive oil, red wine vinegar, grated onion, salt, and pepper to make the vinaigrette.
  5. In a large bowl, combine the spinach, shredded cooked duck, sliced mushrooms, and red onion.
  6. Pour the vinaigrette over the salad and toss gently to combine.
  7. Sprinkle the toasted almonds on top before serving.
