Ingredients

  • 1/2 cup butter or margarine
  • 1 large onion, minced
  • 1 pound mushrooms, sliced
  • 1/2 cup flour
  • 4 cups milk
  • 1 cup grated Parmesan cheese
  • salt and pepper
  • 12 manicotti shells
  • 1 pound Ricotta or cottage cheese
  • 4 ounces Mozzarella cheese, diced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 1/4 cup finely chopped walnuts
  • 3 eggs

Instructions

  1. In a saucepan, melt butter and sauté onion and mushrooms for 5 minutes.
  2. Stir in flour.
  3. Gradually stir in milk.
  4. Cook over low heat until sauce bubbles and thickens.
  5. Stir in Parmesan cheese, salt, and pepper to taste.
  6. Set aside the sauce.
  7. Cook manicotti shells according to package directions.
  8. Drain and cover with cold water to stop cooking.
