Manicotti With Meat Stuffing

Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 medium onion, chopped
  • 1 clove garlic, finely minced
  • 1 Tbsp. butter or oil
  • 1 c. bread crumbs
  • 1 Tbsp. chopped parsley
  • 1/2 lb. Mozzarella cheese, grated
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 eggs
  • 1/2 c. milk (if too dry)

Instructions

  1. Saute first three ingredients in the butter or oil.
  2. Drain excess fat and cool.
  3. Add the next 6 ingredients (and the milk if needed).
  4. Stuff the manicotti.
  5. Spoon over a little of the sauce of your choice and bake covered about 40 minutes.
  6. Store overnight.
  7. The next day, spoon over remaining sauce and heat thoroughly.
