Ingredients

  • 1 1/3 cups flour
  • 1 cup oats
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup milk
  • 1/3 cup melted margarine
  • 1/4 cup maple syrup
  • 2 egg whites
  • 1 cup chopped apple
  • pecan halves

Instructions

  1. Spray 12 muffin cups with vegetable spray.
  2. Combine flour, oats, sugar, baking powder, and cinnamon in a mixing bowl.
  3. Mix well to combine the dry ingredients.
  4. Add milk, melted margarine, maple syrup, and lightly beaten egg whites to the dry ingredients, mixing until just moist.
  5. Fold in chopped apple.
  6. Fill muffin cups 3/4 full with batter.
  7. Top each muffin with pecan halves.
  8. Bake in a preheated oven at 400°F for 20 to 25 minutes.
  9. Allow muffins to cool slightly before serving.
  10. Optional: drizzle with glaze before serving.
