Ingredients

  • 1 cup flour, sifted
  • 3/8 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons salt
  • 3/8 cup brown sugar
  • 1/4 cup oil
  • 3 unbeaten egg yolks
  • 3/8 cup cold water
  • 1 teaspoon maple flavoring
  • 1/2 cup egg whites
  • 1/2 cup chopped nuts

Instructions

  1. Whip the egg whites until stiff peaks form.
  2. Sift together the flour, sugar, baking powder, and salt.
  3. Mix in the brown sugar.
  4. Add the oil, unbeaten egg yolks, cold water, and maple flavoring to the dry ingredients and mix well.
  5. Gently fold in the whipped egg whites and chopped nuts.
  6. Pour the batter into an ungreased loaf pan.
  7. Bake at 325°F for 50-55 minutes, or until the top springs back when touched.
  8. Remove from oven and turn the pan upside down on a wire rack to cool.
