Ingredients

  • 4 eggs
  • 1 cup oil
  • 2 teaspoons maple flavor
  • 1 1/2 cups sugar
  • 1/4 cup brown sugar
  • 2 cups grated zucchini
  • 2 cups flour
  • 1/4 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup raisins
  • 1/2 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, beat the eggs.
  3. Add oil and maple flavor; mix well.
  4. Stir in sugar and brown sugar until combined.
  5. Fold in grated zucchini.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  7. Gradually add dry ingredients to wet mixture, mixing until just combined.
  8. Fold in raisins and chopped nuts.
  9. Pour batter into an 11 x 15 x 2-inch baking pan, smoothing the top.
  10. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool before cutting into squares.
