Ingredients

  • 1 lb. boneless beef shoulder steak
  • 1/4 cup minced onion
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. white vinegar
  • 1 Tbsp. olive oil
  • 1 Tbsp. Dijon-style mustard
  • 1 tsp. dried thyme leaves

Instructions

  1. Combine minced onion, chopped parsley, white vinegar, olive oil, Dijon-style mustard, dried thyme leaves, and garlic to make the marinade.
  2. Place the beef shoulder steak in a plastic bag.
  3. Add the marinade to the bag, spreading evenly over both sides of the steak.
  4. Close the bag securely and marinate in the refrigerator for 6 to 8 hours, turning at least once.
  5. Pour off the marinade and discard it.
  6. Place the steak on a rack in a broiler pan so the surface of the meat is 3 to 4 inches from the heat source.
  7. Broil the steak for 18 minutes, turning once, until it reaches desired doneness.
  8. Carve into thin slices and serve.
