Ingredients

  • 1/2 cup self-rising cornmeal
  • 1/2 cup self-rising flour
  • 1 cup milk
  • 1 1/2 pounds ground beef
  • 8 ounces sharp cheese, shredded
  • 2 eggs
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 17 ounces cream-style corn
  • 1 large onion, chopped
  • 2 to 4 jalapeno peppers, chopped
  • 1 medium bell pepper, chopped

Instructions

  1. Combine self-rising cornmeal, self-rising flour, milk, eggs, salt, soda, cream-style corn, chopped jalapenos, and chopped onion in a bowl; mix and set aside.
  2. Saute ground beef, chopped onion, and chopped bell pepper until lightly browned; drain thoroughly and set aside.
  3. Thoroughly grease a 10 1/2-inch cast iron skillet.
  4. Pour half of the cornmeal batter into the skillet.
  5. Sprinkle evenly with the cooked beef mixture, then shredded sharp cheese.
  6. Pour the remaining batter over the top.
  7. Bake at 350°F (175°C) for 50 minutes or until golden brown.
