  • 3 lb. chuck roast
  • 1 1/2 cups tomato juice

Instructions

  1. Place the chuck roast in a resealable bag.
  2. Stir together tomato juice (or tomato sauce and water), wine vinegar, minced garlic, Worcestershire, salt, sugar, basil, thyme, and pepper.
  3. Pour the marinade over the meat and refrigerate overnight, turning the bag a couple of times.
  4. Place small onions and chopped carrots in the crock-pot.
  5. Add the marinated roast and the marinade liquids into the crock-pot.
  6. Cover and cook on low for 10 hours.
  7. Measure out 2 cups of cooking liquid and pour into a saucepan.
  8. Mix cold water with flour and add to the saucepan to thicken into gravy.
