Ingredients

  • 1 1/2 lb. round steak
  • 1/4 cup enriched flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fat
  • 1 cup condensed beef broth
  • 4 medium potatoes, sliced 1/4-inch thick

Instructions

  1. Cut the steak into pieces.
  2. Combine flour, salt, and pepper; coat the meat with the flour mixture.
  3. In a skillet, brown the meat slowly in hot fat for 20 to 30 minutes.
  4. Add the condensed beef broth to the skillet.
  5. Cover tightly and simmer for 30 minutes, until the meat is almost tender.
  6. Place sliced potatoes over the meat and cover tightly.
  7. Cook slowly for 35 minutes, or until the potatoes are done.
