Marinated Vegetable Platter
Ingredients
- 1/4 c. wine vinegar ⓘ
- 1/4 c. salad oil ⓘ
- 1/2 c. mayonnaise ⓘ
- 1 1/2 tsp. prepared mustard ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. garlic powder ⓘ
- 1 hard-cooked egg, grated or sieved ⓘ
- 4 Tbsp. chopped chives ⓘ
- 1 (16 oz.) can green beans ⓘ
- 1 (14 1/2 oz.) can asparagus ⓘ
- 1 (14 oz.) can artichoke hearts ⓘ
- 1 (15 oz.) can Belgian carrots ⓘ
Instructions
- Whisk together thoroughly the vinegar and oil.
- Add mayonnaise, mustard, salt and garlic powder; continue to whisk. Fold in egg and chives.
- Use vegetables listed or any other vegetables desired.
- Arrange drained vegetables separately in a large dish; do not mix them.
- Pour marinade over vegetables and refrigerate.
