Marinated Vegetable Platter

Ingredients

  • 1/4 c. wine vinegar
  • 1/4 c. salad oil
  • 1/2 c. mayonnaise
  • 1 1/2 tsp. prepared mustard
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1 hard-cooked egg, grated or sieved
  • 4 Tbsp. chopped chives
  • 1 (16 oz.) can green beans
  • 1 (14 1/2 oz.) can asparagus
  • 1 (14 oz.) can artichoke hearts
  • 1 (15 oz.) can Belgian carrots

Instructions

  1. Whisk together thoroughly the vinegar and oil.
  2. Add mayonnaise, mustard, salt and garlic powder; continue to whisk. Fold in egg and chives.
  3. Use vegetables listed or any other vegetables desired.
  4. Arrange drained vegetables separately in a large dish; do not mix them.
  5. Pour marinade over vegetables and refrigerate.
