Ingredients

  • 17 oz. white Shoe Peg corn, drained
  • 17 oz. peas, drained
  • 15 oz. French-style green beans, drained
  • 1/2 cup diced celery
  • 1/2 to 1 cup chopped onions
  • 1/2 cup chopped green pepper
  • 2 oz. chopped pimentos, drained
  • 1 cup sugar
  • 1 teaspoon salt (optional)
  • 1/2 teaspoon pepper
  • 1/2 cup vegetable oil
  • 1/2 cup vinegar

Instructions

  1. Combine all vegetables, tossing lightly.
  2. Combine remaining ingredients in a saucepan.
  3. Bring to a boil, stirring occasionally.
  4. Pour the hot marinade over the vegetables.
  5. Cover and refrigerate for 24 hours or overnight.
