Instructions

  1. Coarsely chop half the zucchini and cucumber.
  2. Chop the green bell pepper, jalapeño pepper, and 1/2 large onion.
  3. Mince the 3 cloves of garlic. Make sure all pieces are quite small.
  4. Place all chopped vegetables in a bowl and toss with 3/4 cup chopped basil and parsley, 2 Tbsp lemon juice, 1/2 cup olive oil, 1/3 cup wine vinegar, a dash of Tabasco sauce, and a dash of salt and pepper.
  5. Refrigerate the mixture for 3 hours before serving.
